To mark the 21st anniversary of the FAIRTRADE Mark in the UK, we worked with Macclesfield College to put on a Celebration Dinner on Wednesday 21st October 2015.
Many thanks to all those who came along – we hope you enjoyed it as much as we did! And a special thanks to our sponsors, Naturally Different (2 Market Place). The Town Mayor of Macclesfield, Cllr Liz Durham, kindly accepted our invitation and was present with her Consort.
The net proceeds raised by the evening will help us to continue campaigning for Fairtrade in Macclesfield.
The dishes were designed by catering students as part of a project about Fairtrade, and served by hospitality students in the Silk Room Restaurant. The delicious three-course menu used 27 Fairtrade ingredients, including the drinks. Here’s the menu we were treated to:
Seared Salmon served on a bed of chilli and bean cous cous, finished with a drizzle of pesto
(Fairtrade ingredients were: olive oil, pesto, chilli sauce, borlotti beans, kidney beans, couscous)
Steamed and pan fried envelope of chicken breast filled with an apricot farce, served on a bed of spicy lentil dhal and garnished with pak choi and finished with white wine jus-lie
(Fairtrade: lentils, turmeric, peppercorns, dried apricots)
Coconut Tuille cup filled with raspberry, banana and cream patisserie, topped with coconut ice cream, garnished with glazed bananas, fresh raspberries, raspberry gel, and coconut marshmallow
(Fairtrade: coconut milk, desiccated coconut, white chocolate, bananas, icing sugar, castor sugar)
